The lemon in this simple, classic recipe helps the Brussels sprouts shine and creates the perfect healthy side dish for anytime of year.
1 bag 1lb. Veg-Fresh Farms Lemons,
1lb. Veg-Fresh Farms Brussels Sprouts, sliced in half
4 Tblsp olive oil
Freshly ground pepper and sea salt, to taste
1. Pre-heat oven to 450°F. Slice Brussels sprouts in half and place into a large bowl. Drizzle with olive oil, salt and pepper and give it a good mix. Spread mixture into a baking dish.
2. Place baking dish into the oven and roast for 25-30 minutes. Remove the dish every 15 minutes and turn to get a perfect roast on the sprouts. 10 minutes before they are done, sprinkle parmesan cheese and squeeze 2 lemons on top of the sprouts and then cut the lemon up and place it on the baking dish and back into the oven.
3. Once the edges are crisp and brown, remove the baking dish from the oven. Taste and add salt and pepper if necessary. Sprinkle with extra parmesan cheese, optional.
